Roasted Cauliflower and Chickpeas with mint & yogurt dressing.

This is a really nice light evening meal but very zingy. Roasting roasting chickpeas gives them a delicious chewy texture removes the powdery texture they can sometimes have and while roasted  cauliflower sounds wrong it works very well  carmalises ( an idea from 101 Cookbooks – Popcorn Cauliflower )

Roasted Cauliflower and Chickpeas with mint & yogurt dressing
.

200g of tinned chickpeas
200g of cauliflower
1 tbsp of paprika
1 tbsp of olive oil
100ml of yogurt
1 handful of fresh mint finely chopped

  1. Turn the  oven to 180degC
  2. Cut the caulflower into small florets
  3. Place in a roasting dish with chick peas
  4. Dust with the paprika and drizzle over the olive oil
  5. Place in the oven and roast for 30 minutes shaking occasionally
  6. Meanwhile finely chop fresh mint and mix with yogurt
  7. To serve place the cauliflower and chick peas on a plate and drizzle over with the mint and yogurt
