Purple Sprouting Broccolli with Anchovy Herb Butter

Purple sprouting broccoli , so pretty you want to pop it in a vase , tender stems and floury ferrous tips .

Inspired by my Lunch at the Larder decided made up a batch of anchovy and parsley butter

Anchovy Herb Butter

Anchovy & Parsley Butter

50g of butter
2 tbsp of finely chopped parsley
2tbsp of finely chopped anchovies
Salt and Pepper

  1. Mix together all the ingredients
  2. Form into a cylindrical shape
  3. Wrap in greaseproof paper and leave in the freezer for at least a hour
  4. Slice portions off as required using a warm knife

Its a great way to use up worn out herbs or garlic . The butter can stay in the freezer and sliced off with a warm knife to melt enticingly over fish , a steak or roasted potatoes .

My tip for cooking purple sprouting would be that it much be steamed the second you try and boil it it loses all its colour A portion of the butter warmed in a pan with a squeeze of fresh lemon juice and poured over the freshly steamed kale proved a delectable treat for a evening at home

I have just had a food-related argument with my boyfreind who claims
