Courgette Fritatta

Courgette Frittata by you.

A couple of months ago we planted some tiny courgette plants, I have watched them survive a major aphid and caterpillar attack , seen flowers grow and wilt and finally they are   large enough to eat.

I wanted a supper dish when courgettes could shine  We picked four 4 inch long courgettes and dinner was ready in minutes from just one pan.  The frittata of  sweet onions and courgettes and salty parmesan was delicious. This may be the summer of the frittata from the tweet declaiming a courgette onslaught it will definitely be a summer of courgettes

Courgettes by you.

Courgette Frittata

1 tbsp olive oil
1 garlic clove, chopped
1 white onion, finely sliced
4 courgettes, diced
4 eggs, beaten
2 tbsp of grated parmesan
salt and freshly ground black pepper

1. Heat the oil in a large ovenproof frying pan fry the garlic, onion and courgette until tender. Season the egg with the parmesan, salt and pepper and pour over the vegetables in the pan, cook for a few minutes
2. Place under a hot grill and cook for 5-6 minutes or until the egg is set and golden on top.
3. Serve with salad

    I’ve got nine courgette plants in a new allotment bed. The soil is a bit weak and thing because it spent thirty years under a shed, but a few bags of manure might have helped. The plants are a mixture of Italian green courgettes and yellow ones – I’ve no idea which is which becuase, of course, I got all the labels mixed up when planting them out.

    I’m fearing an onslaught. I was told yesterday by the kids that they’ve ‘gone off’ courgettes and that they won’t be eating any at all this year.

    I hope they were joking.

    Does look great, i normally leave a few to grow larger. then slice the marrow in to 1.4inch slices and fill the centre with sausage meat.
