The fridge is so stuffed with vegetables and salads that getting things in and out involve and scary game of Tetris-Jenga. There massive round large cauliflower taking up way too much room. So I decided to roast the whole thing.
It was so delicious I actually did that Nigella thing of getting up in the night – Imsomnia is killing me- and having a slice. The charred leaves taste amazing , annoyed I have been feeding them to the guinea pigs.
Roasted Spiced Cauliflower
- Cut into what the trendies of last year called cauliflower steaks, with the leaves left on and dressed with paprika , coriander seeds , sliced onion, preserved lemon, turkish chilli flakes, sumar and lots of oil.
- Baked at 200deg for 45 minutes
- Served drizzled with a mix of tahini and yogurt , more chilli pepper plus a scattering of coriander leaf.
We ate the cauliflower with few other salads beetroot with mint yogurt and , carrot date and parsley salad dressed with salt , lemon and oil.
