After Devilled Kidneys yesterday another luscious breakfast this morning and a headstart on my five-a-day. Tender stems are sweet and the purple flour heads perfectly soak up the yolk.
All you need to do is soft boil the eggs , put the eggs into a pan of rapidly boiling water for 1.5 mins , add the PSB for the last 30 seconds of cooking (the thin stems means thats all it needs) . After cooking I tossed the purple sprouting with a little anchovy sauce, but salt and pepper works too. Just a few more weeks until British asparagus season so that will be the next vegetable dipped in my boiled egg
Quite possibly the very best way to eat purple sprouting broccoli stems.
And now my mouth is watering!! PSB is one of the best things about Spring!
