When @foodwriter tweeted that she had enjoyed roasted asparagus with anchovy crumbs. I love anchovy crumbs I first discovered them in a risotto recipe . Though the crumbs are very easy to make for extra conveinience I have a small bag in the freezer made from leftovers fro Pasta and Meatballs . Crumbs in the freezer are handy for topping baked potatoes and pasta but I loved the thought of them on asparagus. The result was simple supper ,this would work well with tenderstem broccoli or roasted squash
Instead of roasting a grilled the asparagus under a hot grill for a few minutes then serve with a squeeze of lemon and scatter over the anchovy crumbs.
Anchovy Crumbs
2 thick slices of bread (crumbed)
30g tin of anchovies oil included
1 clove of garlic finely chopped
- Finely chop the anchovies
- Fry the anchovies and garlic in the oil , add the breadcrumbs and fry until golden
The crumbs can then be used straight or frozen , to use them place in a hot pan and warm through , it will only take a few seconds
